Mom made these when we were kids in the '60s. I loved learning to measure and helping mom. Loved smelling them baking, but mostly loved eating them!

Ingredients For congo cookies

2/3 cbutter, melted

1 lblight brown sugar or 2 1/4 cups

3eggs
-
2 3/4 call purpose flour

2 1/2 tspbaking powder

1/2 tspsalt
-
1 tspvanilla
-
1 cpecans, chopped
-
1 pkgsemi-sweet chocolate chips
How To Make congo cookies

1Preheat overn to 350 deg. Melt butter, add sugar. Beat until well blended. Add eggs and beat until smooth. Let cool.

2Mix dry ingredients: flour, baking powder, salt. Add to butter mixture and stir well. Add vanilla, chopped pecans and nuts.

3Grease and flour, or line pan with parchment paper. 13 1/2 x 15 x 2" pan at 350 deg for 35-45 min.

4While warm cut into finger-length bars. Makes 35.
