There's nothing better for the Holidays then these pretty melt in your mouth ball cookies! I've been making them for so long and always end up making more because they seem to disappear! My ex-boss warned me never to bring them in the office again! He said they were too addicting! (I brought them in anyway). "Enjoy"

Ingredients For colorful mexican wedding cake cookies

2 cmargarine or unsalted butter, softened (4 sticks)

1/2 cwhite sugar (not powdered)

2 tspvanilla extract

4 call purpose flour

1 1/3 cfinely chopped pecans

3red food coloring drops (optional)

3green food coloring drops (optional)
-
4-5 cpowdered sugar for dusting the cookies

1preheat your oven at 350 degrees

2have your pecans ready and finely chopped. I use my food processor and it only takes seconds to do. Start with about 2 cups whole pecans. More or less is okay!

3place your softened butter or margarine in a medium to large mixing bowl.

4add your white sugar and mix until well blended.

5add your vanilla extract and mix until well blended.

6Start gradually adding your flour. Mix until well blended and your able to form a ball.

7Add your pecans! separate your dough in two parts, add red food coloring in half and green in the other. Mix your colors the best you can.

8start rolling your balls. pinch off some green and red and roll together. This is time consuming but worth it! The cookies won't raise so you can really fill up that cookie sheet

9Bake at 350 degrees for 25 minutes or until they start to slightly brown on the edges. Place on a rack to slightly cool.

10While still warm dust with a little powdered sugar. When they are completely cool dust with a little more! Ta Da!
