This is one from one of my grandmothers, Dorothy Wadkins. She baked these for a cookie swap that my mom and I threw a couple of years ago. Pretty simple but very tasty.

These cookies are perfect for the coconut lover. They remind us of a cross between a buttery coconut cookie and a snickerdoodle. Rolling them in cinnamon sugar gives them a nice cinnamon flavor and mimics the snickerdoodle. Once baked, the outside is crisp, and the inside is soft and chewy. Make these coconut pecan cookies for any occasion.

Ingredients For coconut pecan cookies

1 cbrown sugar

1 cwhite sugar

1 cbutter

1 cshredded coconut

1 cpecans, chopped

2eggs

2 1/2 call-purpose flour

1 tspvanilla extract

cinnamon sugar
How To Make coconut pecan cookies

1Preheat oven to 350 degrees. Mix sugars, butter, and eggs.

2Add vanilla and mix well.

3Mix in flour.

4Then add coconut and pecans; mix well.

5Roll into walnut size balls and roll in cinnamon sugar.

6Place cookies on a prepared cookie sheet.

7Bake until lightly golden brown (11-13 minutes).
