coconut macaroons
The aroma of a coconut macaroon is so tantalizing, but the taste is even better. I have never met anyone who doesn't love a macaroon. Pass a plate of these after dinner with a scoop of vanilla bean ice cream or a fruit sorbet, and you'll top the evening off just right.

Ingredients For coconut macaroons

1 stickbutter, unsalted, softened

1 csugar

1/2 tspsalt, or a scant less

3/4 tspcream of tartar

1 tspbaking powder

2 lgeggs
-
1 tspvanilla

1 1/2 ccoconut, unsweetened

How To Make coconut macaroons

1Cream the butter with the sugar, salt, cream of tartar, and baking powder, in a large mixing bowl..

2Add the eggs, one at a time, beating well.

3Stir in the vanilla.

4Stir in the coconut.

5Stir in the flour.

6Spoon 1 1/2 inch mounds of dough on a cookie sheet and bake in a 350 degree oven for 11 minutes.

7Remove from the sheet with a spatula and cool completely on a rack.

8Store airtight. Makes 28 cookies.
