This recipe was given to me by my neighbor Claire when I lived in Framingham, Massachusetts, in 1972. I had never heard of Whoopie Pies, but I fell in love with these. If you're concerned about the raw egg whites in the frosting, buy pastuerized egg whites. I've been making this recipe as is since 1972 and no one has ever become ill from eating them. The recipe is written just as it is on my very well-worn recipe card.

- COOKIES

1/2 cvegetable shortening

1 csugar

2egg yolks

1 cwhole milk

1 tspbaking soda

- FILLING

2egg whites

2 cconf sugar

How To Make claire's whoopie pies

1Sift dry ingredients together.

2Add rest of ingredients and mix until smooth and well blended.

3Drop tsp on UNGREASED cookie sheets.

4Bake 10-12 min 375 until set but not crisp.

5When cool put together sandwich style.

6While cookies are baking, beat the filling ingredients together until fluffy.
