I wanted to make cream cheese cookies, but no cream cheese. But I had ricotta, fruit, and a cake mix. These came out so good, Light, cake-like citrus sunshine in a cookie. I love semi-homemade. Named after my son, he loves these cookies!

1 cricotta cheese

1/4 cbutter, melted

1 lgegg

1 mdlime, juiced and zested

1 mdorange, juiced and zested

1 boxlemon cake mix (13.25 or 15.25 oz)

1 - 1 1/2 cpowdered sugar

lemon zest, optional

Test Kitchen Tips
For the glaze, we used 4 tsp of juice to achieve the proper consistency. For an extra punch of citrus, we also added a little orange and lime zest to the lemon zest.

1Preheat oven to 350 degrees F. With a mixer, combine the ricotta and butter until fluffy. Add the egg, lime zest, and orange zest and mix well.

2Add the cake mix.

3Mix until combined.

4Line a baking sheet with parchment paper or a baking mat. With a medium scoop. drop the cookie dough two inches apart. Bake for 12 - 15 minutes or until lightly brown on the bottom.

5Let the cookies cool on the cookie sheet for a few minutes. Transfer to a wire rack to cool completely.

6For the glaze, mix the powdered sugar with the orange and lime juice until you have a glaze consistency.

7Dip or drizzle the glaze over the cookies. Sprinkle lemon zest on top, if desired.

8Allow the cookies to dry on a cooling rack to prevent pooling.
