I wanted to make cream cheese cookies, but no cream cheese. But I had ricotta, fruit, and a cake mix. These came out so good, Light, cake-like citrus sunshine in a cookie. I love semi-homemade. Named after my son, he loves these cookies!

These ricotta cookies are rich, cake-like, and full of citrus. They have a nice balance of sweet and tart flavor. Ricotta cheese helps create a soft texture for the cookies. No one will guess the base is a cake mix - these have a scratch-baked feel without the work. The glaze adds the perfect finishing touch. A super yummy treat for summer.

  • 1 c
    ricotta cheese
  • 1/4 c
    butter, melted
  • 1 lg
    egg
  • 1 md
    lime, juiced and zested
  • 1 md
    orange, juiced and zested
  • 1 box
    lemon cake mix (13.25 or 15.25 oz)
  • 1 - 1 1/2 c
    powdered sugar
  • lemon zest, optional

For the glaze, we used 4 tsp of juice to achieve the proper consistency. For an extra punch of citrus, we also added a little orange and lime zest to the lemon zest.
  • Ricotta, butter, egg, and zest in a bowl.

    Preheat oven to 350 degrees F. With a mixer, combine the ricotta and butter until fluffy. Add the egg, lime zest, and orange zest and mix well.
  • Add the cake mix.

  • Scoop batter onto a lined baking sheet.

    Line a baking sheet with parchment paper or a baking mat. With a medium scoop. drop the cookie dough two inches apart. Bake for 12 - 15 minutes or until lightly brown on the bottom.
  • Baked cookies cooling.

    Let the cookies cool on the cookie sheet for a few minutes. Transfer to a wire rack to cool completely.
  • Powdered sugar, orange juice, and lime juice in a bowl.

    For the glaze, mix the powdered sugar with the orange and lime juice until you have a glaze consistency.
  • Dip cookies into the glaze.

    Dip or drizzle the glaze over the cookies. Sprinkle lemon zest on top, if desired.
  • Dry the cooled cookies.

    Allow the cookies to dry on a cooling rack to prevent pooling.
