I was looking for a way to use up browning bananas and I am not a huge fan of banana bread. I also, used Ben&Jerry's ice cream for my inspiration!

3 cups all-purpose flour

1 1/4 teaspoon baking powder

1/2 teaspoon of salt

1/4 teaspoon of baking soda

1/2 cup white sugar

1/2 cup brown sugar splenda

2/3 cup butter, softened

2 eggs
-
1/2 teaspoon vanilla extract

1/2 teaspoon banana extract

1 cup mashed bananas (about 3)

1/2 cup toasted coconut

1/2 cup toasted walnuts, chopped

1 cup milk chocolate chips
How To Make chunky monkey cookies

1Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. Sift the flour, baking powder, salt, and baking soda together, and set aside.

2Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas.

3Add the flour mixture, and stir until just combined. Stir in the chocolate chips, coconut, and walnuts. Drop by spoonfuls onto prepared cookie sheets.

4Bake in preheated oven for 12 minutes.
