I've been making these for years. You can of course top the shortbread with anything you like -- jam or preserves, chocolate, nuts, gum drops, streusel -- let your imagination soar!

Ingredients For christmas shortbread bars

  • 1 c
    granulated sugar
  • 1/2 c
    butter, softened
  • 2 1/2 c
    all purpose flour
  • 8 oz
    chopped dates
  • 10 oz jar
    maraschino cherries, coarsely chopped
  • 1 c
    flaked coconut
  • 14 oz can
    sweetened condensed milk

How To Make christmas shortbread bars

  • 1
    Preheat oven to 300. Lightly spray 7-1/2 x 11-3/4 (or 9 x 13; adjust baking time accordingly) pan with cooking spray. Cream together sugar and butter (you may substitute margarine but the flavor is not as good). Stir in flour until all is incorporated. Press into prepared pan (will seem dry and floury --that's OK!)

    Top with layers of dates, cherries, coconut; drizzle condensed milk over all.

    Bake until top is lightly browned, about 35-40 minutes; if using larger pan, check at 25 minutes. Cool completely before cutting.
