chocolate raspberry bar cookies
This recipe was given to me by my friend, Rose Vanezia, after a wonderful dinner at her home. Rose is no longer with us, but the recipes we've shared live on. These are rich and decadent , yet so easy to make.

3/4 cbutter

3 ozunsweetened chocolate

3eggs

1 1/2 csugar

1 1/2 tspvanilla

1 1/4 cflour

6 ozraspberry jam, seedless

1/4 cmelted chocolate chips
How To Make chocolate raspberry bar cookies

1Melt butter and unsweetened chocolate in a medium saucepan, over medium heat, stirring as it melts.

2Remove from heat. Stir in sugar, blend in eggs one at a time. Add vanilla and stir in flour.

3Spread batter onto a 15x10x1 jelly roll pan (or cookie sheet with sides).

4Bake 15 to 20 minutes at 325 degrees.

5Remove pan from oven and cool. Spread the jam on top. Cut into 4 rectangles. Stack two together, with jam on top. Repeat with other two. Cut into cookie squares. Drizzle with melted chocolate chips on top. Let set until firm.
