I love this cookie.The mint is not to strong and it tastes just like a brownie.I have to say if you love mint or brownies this cookie is for you.My son baked them for our day three of 25 days of cookies.

  • 1 1/2 c
    semi-sweet chocolate chips
  • 1 3/4 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 c
    butter or margarine,softened
  • 1/2 c
    sugar
  • 1/4 c
    brown sugar, firmly packed
  • 1/2 tsp
    peppermint extract
  • 1/2 tsp
    vanilla extract
  • 2
    large eggs
  • 3/4 c
    chopped nuts

    MELT 3/4 CUP MORSELS IN SMALL SAUCEPAN OVER LOWEST POSSIBLE HEAT.WHEN MORSELS BEGIN TO MELT,REMOVE FROM HEAT;STIR.RETURN TO HEAT FOR A FEW SECONDS AT A TIME,STIRRING UNTIL SMOOTH.IMMEDIATELY REMOVE SAUCEPAN FROM HEAT ONCE MORSELS ARE MELTED.COOL TO ROOM TEMPERATURE.

    COMBINE FLOUR,BAKING SODA AND SALT IN SMALL BOWL. BEAT BUTTER,SUGAR,BROWN SUGAR,PEPPERMINT AND VANILLA IN LARGE MIXER BOWL UNTIL CREAMY. ADD EGGS ONE AT A TIME;BEATING WELL AFTER EACH ADDITION. BEAT IN MELTED CHOCOLATE. GRADUALLY BEAT IN FLOUR MIXTURE. STIR IN REMAINING MORSELS AND NUTS.

    DROP DOUGH BY ROUNDED SPOONS ONTO UNGREASED BAKING SHEETS. BAKE AT 350* FOR 9 MINUTES OR UNTIL SIDES ARE SET BUT CENTERS ARE STILL SOFT. LET STAND FOR TWO MINUTES;REMOVE TO WIRE RACKS TO COOL COMPLETELY.
