I got this recipe from Yankee Kitchen...and as I like chocolate chips in about everything thought I would try these.; Don't forget to put the topping on these. SO I made it gluten free. SOME PEOPLE HAVE SUGGESTED ADDING SOME BACON BITES.."Sounds great to me.." Now when I made these I needed to put my oven up to 375.. so do what you need to do..

Ingredients For chocolate chip potato chip cookies."g.f"

  • 2 stick
    butter, softened
  • 1/2 c
    sugar
  • 1 tsp
    vanilla extract
  • 2 c
    gluten free flour, your choice.
  • 1 c
    chocolate chips, mini
  • 1 CUP OF CRUSHED POTATO CHIPS, IN COOKIE MIX.... TOPPING MIX BELOW..
  • 1/4 c
    sugar cinnamon mixture
  • 2 Tbsp
    crushed potato chips
  • 1 pinch
    sea salt, i didn't need it...

    Preheat oven to 350F. In a small bowl mix crushed chips for topping set aside. In another small bowl,measure out 1/4 cup of sugar for rolling cookie.

    In a large bowl mix your sugar,and butter till creamy. Add vanilla, blend in Add 1 cup crushed potato chips and flour and blend now mix in your chocolate chips and just blend in don't over mix..

    spoon by tsp and roll into a ball and roll balls in sugar mix, then put on parchment baking sheet. wiil spread... then gently flatten some,SPRINKLE each cookie with a little of your topping mix. bake about 10 min, at 350, watch close as your oven may be different than mine.
