This is a Soft but Chewy Cookie full of flavor!!! There is no egg in this recipe, but you can replace banana with egg if you want a crispier cookie. (Amounts in recipe). Enjoy!!!

1 cbutter

1 cpeanut butter

1 csugar

2 cbrown sugar

1 Tbspvanilla

2 lgold bananas, mashed. or 3 eggs

3 coatmeal, uncooked

2 cflour
-
1 1/2 tspbaking soda

1 1/2 tspsea salt

I pkgchocolate chips, 11 oz (or white chocolate) optional

1/2 ctoffee pieces, or more optional

1 1/2 cpecans or walnuts, chopped. optional
How To Make chocolate chip, pb, banana, toffee oatmeal cookie

1Preheat oven to 375. In a large bowl, mix butter, pb and sugars on medium speed until smooth. Add banana and vanilla, mix well.

2Add oatmeal, flour, soda and salt. Mix well. Stir in chips, toffee and nuts.

3Line cookie sheets with parchment paper. Using a 1/4 cup scoop, scoop dough onto pan. Bake 15ish minutes. Allow to rest on pan at least 5 minutes, before removing to cooling racks.

4I store in freezer.
