chocolate chip ice cream sandwiches

I have been making chocolate chip cookies for a while. I had a major sweet tooth on a hot day. I wanted to serve Ice cream on the side. Then it hit me. It would be easier if i make them into sandwiches. Everyone in my house hold loves them. They are really easy to make.

Ingredients For chocolate chip ice cream sandwiches

  • 1/2 c
    shortening
  • 1/4 c
    white sugar
  • 1/2 c
    brown sugar, firmly packed
  • 1
    egg
  • 1/2 tsp
    vanilla extract
  • 1 1/8 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 - 1 1/2 c
    semi-sweet chocolate chips mini's
  • 1 pt
    ice cream of your choice (vanilla is used in this recipe)

How To Make chocolate chip ice cream sandwiches

    Preheat oven to 350 degrees F (175 degrees C).

    In a medium bowl, cream together shortening, brown sugar and white sugar. Mix in the egg and vanilla. Combine the flour, baking soda and salt; stir into the batter until moistened. Mix in the chocolate chips. Drop by heaping spoonfuls onto greased cookie sheets. (I roll them into balls and press down with three fingers to make them thick but still keep their form.)

    Bake for 8-10 minutes, until the edges are light brown. Make sure you do not over cook them. You want them a little soft so the flavor of the ice cream can mix in. Allow the cookies to cool. Take the ice cream out to soften mean while.

    This step you need to be fast. Line a small cookie sheet with wax paper. With an ice cream scoop, scoop out one serving to two servings of ice cream onto a cookie. Top off with another cookie. Repeat until they are used up. Immediately freeze. Take out when ready to serve.
