OMG! I brought a double batch of these to work and they disappeared almost immediately. These adult treats are not real sweet, but quite addictive.

Ingredients For chocolate-cherry mini-brownies

  • 2
    large eggs
  • 3/4 c
    sugar
  • 1/3 c
    vegetable oil
  • 3
    1-ounce bittersweet chocolate squares, melted
  • 2 tsp
    bourbon
  • 1/2 tsp
    vanilla extract
  • 2/3 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1/3 c
    coarsely chopped pecans, toasted
  • 1/3 c
    sweetened dried cherries, chopped
  • 1/3 c
    semisweet chocolate mini-morsels
  • powdered sugar (optional)

How To Make chocolate-cherry mini-brownies

    Preheat oven to 350 degrees.

    Beat eggs in a large mixing bowl at medium speed; gradually add sugar, beating until thick and pale.

    Add oil and next three ingredients, beating until blended.

    Combine flour, baking powder, and salt;gradually add to chocolate mixture, beating until well blended.

    Stir in pecans, cherries, and mini-morsels.

    Spoon batter into greased miniature muffin pans (1 3/4"), filling them three-fourths full.

    Bake for 12 minutes; remove from oven, cool in pans on a wire rack for 15 minutes.

    Remove from pans; cool completely on wire rack and dust with sifted powdered sugar, if desired.
