These cookies are chewy and chocolaty with a great taste of almond. I think these have to be one of the best cookies I've tasted.

What a great twist on a classic chocolate chip cookie. The almond paste really adds a rich almond flavor. A perfect flavor combination with the chocolate chips. Almond slivers give the cookie a slight crunch. From the smell of these baking, we couldn't wait for them to come out of the oven. They did not last long in the kitchen.

Ingredients For chocolate almond cookies

  • 8 oz
    almond paste
  • 1 c
    butter, room temperature
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar, firmly packed
  • 2
    eggs
  • 1/2 tsp
    almond extract
  • 2 1/2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 12 oz
    semi-sweet chocolate chips; 1 package
  • 1 c
    toasted almond slivers (optional)

Almond paste is hard but break it down easily by pulsing in your food processor a few times.

    Preheat oven to 350° F. Lay parchment paper on 2 large baking sheets.
  • Almond paste crumbles and two stick of butter in a bowl.

    Break almond paste into small pieces and place in medium-size bowl or container of food processor. Add butter.
  • Butter and marzipan beaten until creamed.

    Beat with electric mixer or process until mixture is creamy and smooth.
  • Sugar and extracts added to butter/almond mixture.

    Add sugars, eggs, and almond extract and beat or process until thoroughly blended.
  • Flour added to almond mixture.

    Stir flour, baking soda, and salt until mixed. Add to almond mixture.
  • Flour blended into almond mixture to form dough.

    Stir until blended.
  • Chocolate chips and slivered almonds being folded into dough.

    Stir in chocolate chips and toasted slivered almonds.
  • Drops of dough on parchment paper on a baking sheet.

    Drop by heaping teaspoonfuls onto prepared baking sheets about 1 1/2 inches apart.
  • Drops of dough baking in the oven.

    Bake 10 to 15 minutes or until golden brown. Depends on your oven.
  • Cookies cooling on a wire rack.

    Remove from baking sheets and cool on wire racks.
