Ingredients For chickasaw pumpkin cookies

1/2 cvegetable shortening

1 1/2 ccooked pumpkin

2 1/2 cflour, less 2 teaspoons

4 tspbaking powder

1 craisins or dates
-
1 cchopped nuts

1 tsplemon extract

2 eggs
-
1 1/4 cbrown sugar

1/2 tspsalt
-
1/2 tspnutmeg
-
1/4 tspginger

1/2 tspcinnamon
How To Make chickasaw pumpkin cookies

1Cream shortening and sugar. Add eggs, pumpkin, salt,nutmeg, ginger, and cinnamon blend well.

2Sift dry ingredients flour, baking powder together and add to pumpkin mixture. Blend until smooth.

3Stir in raisins, nuts, and lemon extract.

4Drop by teaspoons onto greased cookie sheet.

5Bake at 400 degrees for 15 minutes.

6Yield: Approximately 3 dozen cookies.
