Moist, chewy cookie that my husband's work place request of me to make. My Husband tells me they disappear in matter of minutes. I hope you enjoy this delicious cookie.

Ingredients For chewy oatmeal cookies

1 cbutter that has come to room temperature but still slightly firm

1/2 ceach light brown sugar (packed)and dark brown sugar (packed)

1/2 csugar

2 lgeggs slightly beaten

2 Tbsphoney
-
2 tspvanilla extract

1 1/2 cflour
-
1 tspsalt
-
1/2 tspcinnamon
-
1 tspbaking soda
-
2 1/2 cold fashion oats

6 ozrasins or cranrasins

1 cchopped pecans
How To Make chewy oatmeal cookies

1Pour hot water over raisins/crasins to soften about 15 minutes. Drain well and squeeze excess water out using paper towel. Beat butter and sugars together until light and fluffy. This should take about 5 minutes enough time to get your dry ingredients together.

2combine in separate bowl flour, salt, baking soda, cinnamon and oats

3Add: eggs to butter sugar making sure they are incorporated . Add: honey, vanilla mix until well blended.

4Add: flour mixture in 2 steps mixing after each addition until blended. Add: rains/cranrasins, pecans mixing them into batter.

5Place in fridge for 30 minutes. Preheat oven to 350 degrees. using parchment or you can lightly grease cookie sheet drop by tablespoon full 2 inches apart Bake until center of cookie are soft and no longer looks wet about 10 -12 minutes. Let cool on the pan 3-5 minutes, then transfer to a rack to cool
