Soft and chewy, with a good spicy molasses flavor. These cookies are a harbinger of the holidays. Yes, you can make them any time of the year, but to me, they scream Christmas!

Is it really Christmas until you've had a good molasses cookie? This is the perfect chewy one and we could not stop eating them. The spices are perfectly balanced. Inside the cookie is soft and chewy. Outside they are sugary and slightly crisp. Once baked the perfect crackle forms on top. A traditional cookie for Christmas, these need to be on your holiday cookie tray.

Ingredients For chewy molasses cookies

1 cbrown sugar, firmly packed

3/4 cbutter-flavored shortening

1egg
-
1/2 cmolasses

2 1/2 call-purpose flour

1/2 tspsalt

2 tspbaking soda

1/2 tspground cloves
-
1/2 tspground allspice
-
1 tspground cinnamon
-
1 tspground ginger
-
granulated sugar, for rolling
How To Make chewy molasses cookies

1Preheat oven to 350 degrees F. Cream together the brown sugar and shortening. Stir in the egg and molasses and mix well.

2In a separate bowl, mix together the flour, salt, baking soda, cloves, allspice, cinnamon, and ginger.

3Fold the dry ingredients into the wet ingredients a little at a time. Stir until combined.

4Once all the ingredients are combined, you'll have a stiff dough.

5Roll dough into small balls (I use a small cookie scoop).

6Roll in white sugar.

7Place on cookie sheets lined with parchment paper that's been lightly greased. Keep the cookies about 2 inches apart. Alternatively, you can use a Sil-Pat mat, if you have old cookie sheets.

8Bake 8 - 9 minutes.

9Leave on the cookie sheet 1 - 2 minutes until set.

10Slide the parchment paper or move the cookies to a cooling rack to cool completely. Keep in an airtight container for about a week (if they last that long).
