My fellow quilter Willa would bring these to guild meetings when it was her turn. I made them one day for my husband and he has been addicted ever since. Of course everyone one else loves them as well.

Ingredients For chewy cakes

4large eggs, well beaten

1 Tbspbutter or margarine, softened

1/3 tspmaple extract

1/2 tspvanilla extract

2 clight brown sugar, packed

2 call-purpose flour
-
1 tspbaking powder
-
1/2 tspsalt
-
1/4 tspbaking soda
-
2 cpecans, coarsely chopped

powdered sugar, optional
How To Make chewy cakes

1Lightly grease a 9x13 baking pan. Preheat oven to 325 degrees.

2In a medium bowl mix flour, baking powder, baking soda and salt; set aside. Put the pecans in another bowl and set it aside.

3Mix first five ingredients together in a medium saucepan. Cook on medium heat a couple of minutes, not long, stirring constantly until well blended. Remove from heat and stir in flour and pecans.

4Bake for 30-45 minutes. Place on wire rack to cool. Cut into pieces and sprinkle with powdered sugar if desired. ENJOY!
