Blue Ribbon Recipe
Slightly nutty, slightly fruity, and perfectly sweet, these cherry chews are a great treat for any celebration. The cherries burst in your mouth while you chew. Then, you get bits of pecans and the sweetness of coconut. Smooth and creamy, the icing adds another layer of cherry flavor and sweetness.

Ingredients For cherry chews
- CRUST

1 csifted all-purpose flour

1 crolled oats
-
1 cbrown sugar
-
1 tspbaking soda
-
1/4 tspsalt

1/2 csoftened butter
- FILLING

2 lgeggs
-
1 cbrown sugar
-
1/2 tspalmond extract
-
2 Tbspall-purpose flour
-
1/2 tspbaking powder
-
1/2 tspsalt
-
1 cshredded coconut
-
16 ozmaraschino cherries, halved
-
1/2 cpecan halves
- CHERRY ALMOND ICING
-
3 Tbspsoftened butter
-
2 csifted icing sugar
-
2 Tbspmaraschino cherry juice

1/4 tspalmond extract
How To Make cherry chews

1Heat oven to 350 degrees F. Mix flour, oats, brown sugar, baking soda, and salt.

2Add butter.

3Mix until crumbly, first with a fork, then with fingers.

4Press the mixture into the bottom of a greased 13X9X2 pan. Bake for 10 minutes.

5Beat eggs.

6Stir in brown sugar and almond extract.

7Mix flour, baking powder, and salt.

8Gently stir into the egg mixture.

9Add coconut and cherries; stir to blend.

10Pour over the baked crust and spread evenly.

11Sprinkle with pecans.

12Return to oven and bake for 25 minutes until lightly brown.

13Remove from oven and let cool for 20 - 30 minutes.

14For the icing, blend butter and sugar.

15Add cherry juice and almond extract. Use enough juice to make the icing spreadable.

16Stir icing until smooth.

17Ice with the cherry almond icing.
