This recipe of Mom's is the way she made these unique and fantastic cookies. I personally make it with milk in place of the oranges and juice when I make it as I am not a big fan of citrus type frostings.

Ingredients For carrot cookies, mom's

  • 1 c
    shortening
  • 3/4 c
    sugar
  • 2
    eggs
  • 2 c
    flour
  • 1/2 tsp
    salt
  • 2 tsp
    baking powder
  • 3 Tbsp
    butter
  • 1 c
    cooked carrots, mashed
  • 2 Tbsp
    grated orange peel
  • 1/2 c
    powdered sugar
  • 1 Tbsp
    orange juice

How To Make carrot cookies, mom's

  • 1
    Mix shortening, sugar and eggs. Blend in flour, powder and salt. Blend in carrots. Bake on greased cookie sheets 8-10 minutes at 400 degrees. Cool. Frost with blend of butter, orange peel and powdered sugar, using enough orange juice to make a spreadable frosting.
