This recipe of Mom's is the way she made these unique and fantastic cookies. I personally make it with milk in place of the oranges and juice when I make it as I am not a big fan of citrus type frostings.

1 cshortening

3/4 csugar

2eggs

2 cflour

1/2 tspsalt

2 tspbaking powder

3 Tbspbutter

1 ccooked carrots, mashed

2 Tbspgrated orange peel

1/2 cpowdered sugar

1 Tbsporange juice
How To Make carrot cookies, mom's

1Mix shortening, sugar and eggs. Blend in flour, powder and salt. Blend in carrots. Bake on greased cookie sheets 8-10 minutes at 400 degrees. Cool. Frost with blend of butter, orange peel and powdered sugar, using enough orange juice to make a spreadable frosting.
