These are awesome cookies!! While I was on Vancouver Island I participated in the Farmers Market with my soap...across from me was this lady that made these cookies and sold them for a dollar each... I had one every Saturday morning at the market...so delicious...she only shared the recipe with me because I was leaving the island!! Enjoy all!! * not my pic

Ingredients For carrot cake cookies with cream cheese frosting

1/2 craisins

1/4 coatmeal

1/2 cbutter

1/2 cpacked brown sugar

1/2 csugar

1 lgegg

1 cpacked finely grated carrots

1 1/2 call purpose flour

1 1/4 tspcinnamon

1/2 cchopped walnuts, plus extra for top
- CREAM CHEESE FROSTING

1 cpowdered sugar
-
1 pkg6 oz cream cheese
-
1/4 cbutter
-
2 Tbspheavy cream
-
2 tsplemon juice
How To Make carrot cake cookies with cream cheese frosting

1Preheat oven to 350. Line a cookie sheet with parchment papere. Place oats and raisins in a small bowl and add 1/4 cup warm water. Let soak until water is absorbed (15 mins). Beat butter and both sugars. Add eggs and the carrots.. Add flour and cinnamon. Beatto blend in. Stir in raisin mixtyre and nuts....batter will be sticky. Drop by lever tbsp on sheeet....about 1 1/2 - 2 inches apart. Bake until golden...20 mins. Cool...when all are baked and cooled, frost and add a walnut to the top of each one.

2Mix a frosting together and beat till creamy. Frost the cookies when cool.
