My husband is from South Louisiana and doesn't have any family here. To show my appreciation for all he does for me, I try to learn all his favorite things and this is one of them. His best friends mom made them for our wedding and she passed the recipe on to me.

Ingredients For cajun pecan cocoons

2 csifted flour

1/5 lbreal butter

1/3 csugar

1 cchopped pecans

2 tspwater
-
2 tspalmond extract

confectioners sugar
How To Make cajun pecan cocoons

1Preheat oven to 325F.

2Mix all ingredients in bowl and chill for two hours.

3Shape into small balls, by rolling between palms and bake on an ungreased baking sheet for 20 minutes. They will not brown.

4In another bowl add about a cup of confectioners sugar. When slightly cooled, roll each cookie in sugar until well coated.
