butter cookies with filling
I was given this recipe 40 years ago from a co-worker. These cookies are a big hit with friend and family to this day. The taste of the cookie which has no sugar and the filling just complement each other.

Ingredients For butter cookies with filling

1 cbutter, softened

1/2 cwhipped cream, unsweetened

2 cflour
- FILLING

1/4 cbutter soften

3/4 cconfectioners' sugar

1egg yolk

1 tspvanilla extract
How To Make butter cookies with filling

1Mix butter, cream and flour thoroughly. Chill for 1 hour. Heat oven at 375. Roll dough about 1/16" high on flour board.

2Cut into rounds not bigger than 1-1/2". Put on a cookie sheet with parchment paper. Sprinkle sugar on top of cookie rounds. Prick cookies with fork and bake for 9 minutes. Put two cookies together with filling.

3Filling- you can tint filling with food coloring.
