I love peanut butter and chocolate. This is a very simple cookie recipe. I have changed this recipe to my liking. The original Was clipped from a magazine. I changed a lot of measurements in this recipe. I also added chopped salted peanuts to the filling and added more of a chocolate topping. Thes cookies are fabulous. They are not dry like a lot of cookies of this type. They are great to make for a party, or for a Christmas cookie platter. Enjoy everyone!

Ingredients For peanut butter & chocolate thumb print cookies

  • 3/4 c
    sugar
  • 1 c
    softened salted butter
  • 2
    egg yolks
  • 2 tsp
    vanilla
  • 1/2 c
    plus 1 tb unsweetened cocoa powder
  • 1 1/2 c
    flour
  • 1/4 tsp
    salt
  • PEANUT BUTTER FILLING
  • 2/3 c
    creamy peanut butter ( do not use chunky)
  • 2/3 c
    powdered sugar
  • 1/4 c
    chopped dry roasted peanuts
  • TOPPING
  • 3/4 c
    chocolate chips melted

How To Make peanut butter & chocolate thumb print cookies

    Heat oven to 350° Parchment lined baking pan or lightly grease a baking pan.

    Place softened butter and sugar in a bowl. Beat butter and sugar together until fluffy.

    Add in the egg yolks and vanilla. Beat together until well combined.

    Mix flour, cocoa powder and salt together in a bowl.

    Add flour mixture to butter mixture a little at a time , while beating on low speed. Continually beat for about two minutes and it will become a ball of dough. Refrigerate 30 minutes. Roll pieces of dough in hand to make a 1 inch ball. ( like a small meatball. Place balls on cookie sheet. Press centers with thumb to make an indentation. Bake for 10 to 12 minutes or until edges are not doughy. Do not over bake, or they will get dry when cooled.

    While cookies are baking. Combine peanut butter, peanuts, and powdered sugar in a bowl. After peanut butter mixture is thoroughly combined roll mixture into about half inch size balls of peanut butter.

    Remove cookies from oven. While cookies are still hot. Place a ball of peanut butter in each cookie indentation. Press lightly to flatten the peanut butter. Place back in oven for one minute. Remove from oven and let cool thoroughly.

    Melt chocolate chips in microwave bowl. Stop every 30 seconds to stir until completely melted and smooth.

    Using a teaspoon. swirl a circle of chocolate on top of peanut butter topping. Let chocolate set ( refrigerate to set chocolate quicker) and serve.store in a sealed container.
