Ingredients For bonnie jean's coconut mini mountains

  • 28 oz
    (2 cans -14 oz. ea.) eagle brand sweetened condensed milk
  • 1 lb
    flaked coconut (about 5 c. not packed)
  • 2 c
    cut up of ground walnuts
  • 6 Tbsp
    baking cocoa
  • 1 tsp
    vanilla extract
  • 1 tsp
    almond extract
  • 1/2 tsp
    red food coloring, optional

How To Make bonnie jean's coconut mini mountains

  • 1
    Cover cookie sheets with foil the grease and flour foil; set aside. Mix together in a large bowl the coconut and cocoa, then add all remaining ingredients. Drop onto prepared cookie sheets by the Tablespoonful and slightly flatten. Bake in 325^ oven for 15-17 minutes or until golden brown Remove from baking sheets immediately; If they spread apart squish together- the coconut will hold together.( I always squish them anyway) Cool on wire rack. Store loosely covered at room temperature. --- Note: If desired, decorate mounds with 1/2 red or green cherries before baking.
