With spring just around the corner, here is a fun recipe the kids can help make. I did this with my own children and, also, with my students in the school kitchen. It was a great, fun time and the kids learned about cooking and working together.

Ingredients For bird nests cookies

  • COMBINE IN A BOWL:
  • 3 c
    crispy rice cereal
  • 1 c
    shredded coconut
  • BRING JUST TO A BOIL WHILE STIRRING:
  • 1/3 c
    light corn syrup (honey would be better mixed 3/1 with water)
  • 1/2 c
    brown sugar
  • 3/4 c
    peanut butter
  • 1 tsp
    vanilla
  • REMOVE FROM HEAT, STIR IN THE CEREAL & THE COCONUT
  • LET IT COOL, THEN, SHAPE INTO BIRDS' NESTS.
  • FILL WITH JELLY BEAN "EGGS"
