I was an elementary school secretary for 12 years while my sons were in school and this recipe came from the PTO cookbooklet they published. I make this fairly often but especially in the fall when the new apples come out. Enjoy

Ingredients For better for you fresh apple cookies

2 call purpose flour

1 cwhite wheat or whole wheat flour

1 1/2 tspbaking soda

3/4 cshortening

3/4 csplenda brown sugar

3/4 clight brown sugar

1 1/2 tspsalt
-
1 1/2 tspcinnamon

3/4 tspground cloves
-
3/4 tspnutmeg
-
2eggs
-
1 1/2 cchopped walnuts

1 1/2 cchopped unpeeled apples
-
1/2 craisins
-
1/2 cmilk
-
3/4 tspmaple flavoring (optional)
How To Make better for you fresh apple cookies

1Mix flours and baking soda together. Mix shortening, brown sugars, salt, spices and eggs until well blended.

2Add flour mixture, nuts, raisins and apples. Blend in milk and maple flavoring, if using.

3Drop by large spoonfuls onto greased cookie sheets. Bake at 400 deg. for 11-14 minutes until medium brown in color. Cool on racks.

4There is a glaze if you choose to use it. Blend 1 1/2 cups confectioners sugar, 1 Tbl. margarine or crisco, 1/4 tsp. vanilla 1 1/2 Tbl. milk. If desired, 1/2 to 3/4 tsp. of maple flavoring can be added to glaze. Sread on cookies while warm.
