bea's butterscotch cookies

This is my husbands favorite cookie ! His Mom, Betty, made these a lot and after she passed away I found the recipe. It was handwritten on a sheet of notebook paper, the edges are all crinkly and brown and it has lots of stains from vanilla and flour I imagine. She had made a note to add the butterscotch chips to the recipe and I later on added the sour cream for extra moistness. They really are sooo good, you can't eat just one !

Ingredients For bea's butterscotch cookies

  • 1 1/2 c
    brown sugar, packed
  • 1/2 c
    shortening
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2
    large eggs
  • 1 tsp
    vanilla
  • 2 1/2 c
    all purpose flour
  • 8 oz
    sour cream
  • 3/4
    bag of butterscotch chips

How To Make bea's butterscotch cookies

    Pre-heat oven to 375 degrees. Grease several cookie sheets.

    In mixer bowl beat the brown sugar and shortening until well mixed.

    Add baking soda, baking powder and salt to sugar mixture, mix till combined.

    Beat in eggs, one at a time, then add vanilla. Mix till just combined.

    Add flour and sour cream , alternately, until all is combined and mixed well after each addition.

    Add the 3/4 bag of butterscotch chips and combine with wooden spoon.

    Using a cookie scoop, drop dough 2 inches apart onto lightly greased cookie sheets.

    Bake 12-14 min. or just until lightly browned. Cool on racks, (we just ate them) lol
