These are a little treat that I came up with. Well, not completely. Some of the recipe was the same, but I changed the way these are made and they turned out great! These can be pre-made, wrapped and ready to go for you or your kids in the morning. A lot healthier than the store bought tarts, and you control what is in them.

Ingredients For barbara's chewy oatmeal breakfast treat bars

  • 2 c
    quick cooking oatmeal
  • 1 1/4 c
    flour
  • 1 c
    brown sugar packed
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 c
    butter or margarine
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1/4 tsp
    vanilla powder
  • 1/2 tsp
    cinnamon
  • FILLING
  • 1 jar
    (9oz) of your favorite preserves (strawberry, raspberry, cranberry sauce(jelly), marmalade, grape, blackberry, apricot, mango).
  • 1/2 c
    fresh berries to match the jam to smash up
  • 1/8 tsp
    cinnamon sugar
  • TOPPING (TO SPRINKLE ON TOP)
  • vanilla sugar
  • cinnamon sugar

How To Make barbara's chewy oatmeal breakfast treat bars

    Preheat oven to 400°. Spray 8x8 square pan and set aside.

    Cream butter and slowly add sugar, egg and vanilla while beating at medium speed with mixer. Combine flour, soda, cinnamon, vanilla powder and salt. Add to butter mixture and mix well. Stir in oats. Press 1/2 of oatmeal mix on the bottom of the pan.

    Smash raspberries, spinkle with cinnamon sugar, and add jam. stir to combine. smooth raspberry mix over bottom layer of oats. Pour and sprinkle the remaining mix evenly over the jam. Sprinkle Vanilla Sugar and Cinnamon Sugar on top. (about a tbsp each or to taste)

    Bake for 30 minutes. Let cool completely before cutting into bars. Pre-cut and wrap these for a quick on-the-go breakfast or snack with a smoothie in the morning
