I'm always looking for nutritious, quick, and preferably portable breakfast ideas. These "cookies" fit the bill. Plus, with olive oil (instead of butter/margarine) and applesauce (instead of egg) this is a recipe you can feel good about.

Treat the family to cookies for breakfast with these banana bread breakfast cookies. Slightly sweet, they taste exactly like banana bread with pops of sweet raisins throughout. Oats help to make the cookie heartier and add a sturdy texture. A great use for ripe bananas and they'd freeze wonderfully. If someone is allergic to eggs, this is an egg-free recipe.
