I'm always looking for nutritious, quick, and preferably portable breakfast ideas. These "cookies" fit the bill. Plus, with olive oil (instead of butter/margarine) and applesauce (instead of egg) this is a recipe you can feel good about.

  • 1 1/2 c
    unbleached all-purpose flour
  • 1/2 c
    granulated sugar
  • 3/4 tsp
    cinnamon
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground nutmeg
  • 1/2 c
    extra virgin olive oil
  • 1 3/4 c
    quick cooking oats, uncooked
  • 2 md
    mashed ripe bananas
  • 1/4 c
    unsweetened applesauce
  • 1 c
    raisins

How To Make banana bread breakfast cookies

    Preheat the oven to 400 degrees F. Combine flour, sugar, cinnamon, baking soda, salt, and nutmeg in a mixing bowl.

    Stir in olive oil until the mixture resembles a coarse meal.

    Add oats, mashed bananas, applesauce, and raisins.
