I'm always looking for nutritious, quick, and preferably portable breakfast ideas. These "cookies" fit the bill. Plus, with olive oil (instead of butter/margarine) and applesauce (instead of egg) this is a recipe you can feel good about.

1 1/2 cunbleached all-purpose flour

1/2 cgranulated sugar

3/4 tspcinnamon

1/2 cextra virgin olive oil

1 3/4 cquick cooking oats, uncooked

2 mdmashed ripe bananas

1/4 cunsweetened applesauce

How To Make banana bread breakfast cookies

1Preheat the oven to 400 degrees F. Combine flour, sugar, cinnamon, baking soda, salt, and nutmeg in a mixing bowl.

2Stir in olive oil until the mixture resembles a coarse meal.

3Add oats, mashed bananas, applesauce, and raisins.

4Mix thoroughly.

5Drop by teaspoonfuls onto a cookie sheet that’s been lightly coated with cooking spray (or use a baking stone, which doesn't require greasing.)
