Two of my favorite things - bacon and chocolate chip cookies! This is a perfect meld of flavors. After you make this the first time you can decide if you want more or less of any of the ingredients. But I must say, this is how I like them. No that's wrong... this is how I love them!

Sweet and salty fans, rejoice. These bacon chocolate chip cookies are going to be your new favorite. They're a gourmet twist on chocolate chip cookies. We loved the use of dark chocolate chips. Their rich flavor with crunchy bits of smoky bacon is fantastic. Chopped pecans also add a nice crunch. Once baked, the edges of the chocolate chip cookie are crispy but the middle remains chewy. Yum!

Ingredients For bacon chocolate chip cookies

  • BACON
  • 7 slice
    thick-cut bacon
  • 1/2 c
    lightly packed brown sugar
  • COOKIE DOUGH
  • 2 1/4 c
    all-purpose flour
  • 1/4 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 4 Tbsp
    bacon drippings, that have cooled and become solid
  • 4 Tbsp
    softened margarine
  • 1 stick
    softened butter
  • 1/2 c
    sugar
  • 1 c
    firmly packed brown sugar
  • 2 lg
    eggs
  • 1 Tbsp
    vanilla extract
  • 1 Tbsp
    apple cider vinegar
  • 1 c
    coarsely chopped pecans
  • 3 c
    dark chocolate chips

How To Make bacon chocolate chip cookies

  • Dip slices of bacon in brown sugar.

    Preheat oven to 350 degrees F. Put the brown sugar in a medium-sized bowl. Doing one strip at a time, put the bacon in the bowl and coat it with the brown sugar.
  • Place slices of bacon on a parchment paper-lined baking sheet

    Place the bacon flat on a parchment paper-lined baking sheet. Repeat until all are done. Any leftover sugar can be sprinkled onto the bacon on the baking sheet.
  • Bake for 12 minutes.

    Bake for about 12 minutes.
  • Flip bacon.

    Turn each piece of bacon over and baste with the bacon grease.
  • Bake for another 12 minutes.

    Return to the oven and bake an additional 12 minutes or until the bacon is well cooked and crisp (but not burnt).
  • Remove from oven and cool.

    Remove from the oven and set on a rack to cool. Do not throw away the bacon grease.
  • Sift flour, baking soda, baking powder, and salt.

    In a bowl, sift together the flour, baking soda baking powder, and salt.
  • Break up the cooled bacon.

    Break up or cut up the cooled bacon into small pieces the size of the chopped nuts and chocolate chips. Set aside.
  • Cream bacon grease, margarine, butter, and sugars.

    In a large bowl, cream the bacon grease, margarine, butter, and sugars.
  • Add eggs, vinegar, and vanilla.

    Add the eggs, vinegar, and vanilla extract.
  • Slowly add the flour mixture.

    Slowly add in the flour mixture.
  • Fold in the bacon, chocolate chips, and nuts.

    When the dough comes together, fold in the bacon, nuts, and chocolate chips.
  • Chill the dough.

    Refrigerate dough in a covered bowl for a minimum of 3 hours or overnight.
  • Drop tablespoons of dough onto a baking sheet.

    Once the dough is chilled, preheat the oven to 350 degrees F. Line baking sheets with parchment paper. Drop 1 Tbsp of dough at a time onto the parchment paper.
  • Bake for 10 - 15 minutes.

    Bake for 10 - 15 minutes (depending on your oven).
  • Cool the cookies.

    The cookies should be golden brown. Don't remove them from the pan right away. Wait a couple of minutes, and then move cookies to a wire cooling rack. If you don't have a wire cooling rack, place cookies on a wax paper-lined surface to cool completely.
