Ingredients For apple cider cookies

  • 1 c
    apple cider
  • 1 c
    butter, softened
  • 1 c
    sugar
  • 1/2 c
    brown sugar, light
  • 2 lg
    eggs
  • 2 tsp
    vanilla
  • 3 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 2 tsp
    cinnamon

How To Make apple cider cookies

    Reduce Apple Cider: Pour 1 cup apple cider into a small saucepan and bring to a simmer over medium heat. Allow to simmer for about 10 minutes until it reduces to 1/4 cup. Allow to cool.

    Preheat oven to 350 degrees F.

    Line cookie sheets with parchment paper.

    In a large bowl cream the butter and sugars until light and fluffy.

    Beat in eggs, one at a time.

    Add reduced apple cider and vanilla extract. Mix until well combined.

    Add dry ingredients - flour, baking powder, baking soda and cinnamon. Mix until combined.

    Scoop 1 Tbsp portion of dough and roll into balls. Place on cookie sheet.

    Bake 10-12 minutes until golden.

    Let cool on a cookie sheet for 5 minutes. Remove to wire rack. Enjoy!
