Ingredients For andes mint cookies

  • 4 Tbsp
    powder sugar
  • 2 c
    flour
  • 1 tsp
    peppermint extract
  • green food color
  • frosting:
  • 2 c
    powder sugar
  • 1/4 c
    unsweetened cocoa powder
  • 1/4 c
    hot water
  • 4 Tbsp
    butter
  • 1/2 tsp
    vanilla
  • andes mints, cut in half (to top cookie with)

How To Make andes mint cookies

    Mix together first 5 ingredients.

    Roll rounded teaspoonfuls into balls and thumbprint.

    Bake 7-8 minutes at 350
  • 4
    Whisk together the 5 frosting ingredients until smooth.
  • 5
    Top each cookie with frosting and add half of an andes mint to center.
  • 6
    Frosting will harden in about 30 minutes.
