almond joy cookies
Someone posted this recipe on Facebook awhile back, and a friend asked me to e-mail it to her. I couldn't find this exact recipe on Just-a-Pinch, so I'm adding to make it easier for her to find the recipe. These cookies have been a big hit at 2 family reunions in the past 3 years.

Ingredients For almond joy cookies

1/2 cbutter or margarine

3/4 cwhite sugar

3/4 cbrown sugar

2eggs
-
1-1/2 tspvanilla extract

2-1/4 cflour
-
1 tspbaking soda

1/2 tspsalt

2 cchocolate chips
-
1 csweetened coconut
-
1 calmonds, chopped
How To Make almond joy cookies

1Preheat oven to 375. Grease cookie sheets, or place parchment paper on cookie sheets.

2Mix flour, baking soda, and salt. Set aside.

3In large bowl, cream butter and sugars together. Beat in eggs and stir in vanilla.

4Stir in dry ingredients until well mixed, then stir in chocolate chips, coconut, and almonds.

5Drop by rounded tablespoonfuls onto prepared cookie sheets. Bake 8-10 minutes.

6Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
