4 call purpose flour

1 1/2 tspbaking powder

1/2 tspsalt

1 stickbutter, room temperature

1 csugar
-
1/2 tspcoconut extract
-
3eggs

1/2 cflaked coconut

1/2 csliced almonds

How To Make almond joy biscotti
-
1Preheat oven to 350 degrees.

2Line a large baking sheet with parchment paper. set aside.

3In a medium bowl, mix together flour, baking soda and salt. Set aside.

4In a large mixing bowl, cream together butter and sugar until smooth.

5Add eggs, one at a time, mixing well after each addition.

6Add extract and mix well.

7Add in one third of the flour mixture at a time and mix well after each addition.

8Stir in coconut and nuts. Dough will be stiff.

9Divide dough into 2 equal parts. Place on parchment lined baking sheet and form each into approximately a 12" X 4" X 1" rectangle.

10Bake in a 350 degree oven for 30 minutes. Remove to a cooling rack and cool 10 - 15 minutes. Reduce oven to 350 degrees.

11Slice each loaf on the diagonal into 3/4 Inch slices.

12Place slices on a baking sheet and bake 10 minutes, turn and bake an additional 10 minutes. Remove to a rack to cool completely.

13When cooled, melt chocolate according to package directions. Spread chocolate on one side of cookie and place on a sheet of parchment to set.
