Ingredients For almond joy biscotti

  • 4 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 stick
    butter, room temperature
  • 1 c
    sugar
  • 1/2 tsp
    coconut extract
  • 3
    eggs
  • 1/2 c
    flaked coconut
  • 1/2 c
    sliced almonds
  • coating chocolate

How To Make almond joy biscotti

    Preheat oven to 350 degrees.

    Line a large baking sheet with parchment paper. set aside.
  • 3
    In a medium bowl, mix together flour, baking soda and salt. Set aside.

    In a large mixing bowl, cream together butter and sugar until smooth.
  • 5
    Add eggs, one at a time, mixing well after each addition.
  • 6
    Add extract and mix well.

    Add in one third of the flour mixture at a time and mix well after each addition.

    Stir in coconut and nuts. Dough will be stiff.

    Divide dough into 2 equal parts. Place on parchment lined baking sheet and form each into approximately a 12" X 4" X 1" rectangle.

    Bake in a 350 degree oven for 30 minutes. Remove to a cooling rack and cool 10 - 15 minutes. Reduce oven to 350 degrees.

    Slice each loaf on the diagonal into 3/4 Inch slices.

    Place slices on a baking sheet and bake 10 minutes, turn and bake an additional 10 minutes. Remove to a rack to cool completely.

    When cooled, melt chocolate according to package directions. Spread chocolate on one side of cookie and place on a sheet of parchment to set.
