Ingredients For almond cookies

  • 1 1/2 c
    all-purpose flour
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    cream of tartar
  • 1/2 c
    butter, softened
  • 1/4 c
    vegetable shortening
  • 1/2 c
    sugar
  • 1 lg
    egg yolk
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    almond extract
  • 36
    whole almonds

How To Make almond cookies

    Heat oven to 350 degrees. Combine the flour, baking soda and cream of tartar - mix well.

    Beat the butter and shortening in a large mixer bowl with electric mixer on medium speed until creamy. Beat in the sugar and egg yolk - mix well.

    With the mixer on low speed, add the flour mixture. Beat until a soft dough is formed. Shape rounded teaspoons of dough into balls and place on a baking sheet. If the dough is too soft to handle, chill for 30 minutes. Place an almond in the center of each cookie.

    Bake 11-14 minutes or until edges are lightly browned. Let cookies cool on the baking sheet for 1-2 minutes. Remove and cool on wire cooling racks.
