Everyone loves these cookies! These are very thin crispy wafer like cookies that melt in your mouth. You can't eat just one! These are very popular in our family during the holidays!

Ingredients For addy's ginger cookies

3/4 cshortening
-
3/4 cbutter
-
1 cgranulated sugar

1 cbrown sugar, firmly packed

1 lgegg
-
1/2 cdark karo syrup
-
1/2 chalf and half
-
2 Tbsphot, strong black coffee
-
2 1/2 tspbaking soda, dissolved in the coffee
-
1/2 tspsalt
-
1 tspcinnamon
-
1 tspginger
-
1 tspcloves
-
6 cflour
How To Make addy's ginger cookies

1Mix in the order given. Whisk the spices and salt into one of the cups of flour. Add enough flour to make a soft dough, but no more than 6 cups total. Put the dough in the refrigerator overnight to make it easier to handle. Roll out thin(1/8 inch or less) on a pastry cloth.

2Bake in 350 degree oven for 5-8 minutes. Cool 1 minute on cookie sheet. Do NOT grease cookie sheets.

3Don't be afraid to handle the dough. Don't use a 4 inch cookie cutter. I have used a 3 inch cookie cutter as well as small cookie cutters shaped as leaves, acorns, etc.

4If cookies look pale, they're not done, bake until beginning to turn dark brown color.
