2 bite jam jams

Jam Jams seem to be very popular this year. Got this recipe from a fellow actor. She made them and brought them as a back stage treat one night we were performing. What a yummy treat this would make for Santa. I usually use homemade strawberry jam when I make these cookies but raspberry or cherry works well too. The house is very fragrant while these cookies bake. Serve with icy cold milk.

Ingredients For 2 bite jam jams

  • 1/2 c
    white sugar
  • 1/2 c
    molasses
  • 3 Tbsp
    hot water
  • 1 c
    butter or margarine
  • 1 lg
    egg
  • 1 Tbsp
    pure vanilla extract
  • 1/2 tsp
    salt
  • 2 tsp
    ginger
  • 1/2 tsp
    ground cloves
  • 1 tsp
    baking soda
  • 3 1/4 c
    flour
  • FILLING
  • 3/4-1 c
    strawberry or raspberry but apricot or a mixed berry jam works well

How To Make 2 bite jam jams

    Cream together sugar, butter, egg, add molasses,hot water and vanilla. Beat well
  • 2
    Mix dry ingredients-salt, soda, ginger, cloves,and flour and add to wet ingredients. Mix well. Will form a soft dough.

    Divide dough into three balls and wrap and chill for 1 hour. Once chilled-Roll dough in small balls.

    Place cookie balls on lined cookie sheet 1 inch apart. Flatten the ball with the bottom of a glass into a 1 inch circle.

    Bake 8-10 min in a 350° oven

    Remove from oven and immediately remove from cookiw sheet.

    Cool slightly on a wire rack.

    While still warm take two cookies, spread one with jam and stick together to make a sandwich cookie.
