I love Mole, it's really tasty and very different. It is very popular in New Mexico and Mexico.

Ingredients For turkey mole recipe

  • 1/2 c
    slivered almonds
  • 1/2 tsp
    vegetable oil
  • 2 1/8 md
    dried ancho or anaheim chillies, stemmed, seeded and chopped
  • 1 c
    chopped onion
  • 2 clove
    garlic
  • 1
    chipoltle chile in adobo
  • 1 1/2 c
    fire roasted crushed tomatoes
  • 1 Tbsp
    sugar
  • 1/2 tsp
    cumin
  • 1/4 tsp
    sea salt
  • 1/8 tsp
    ground cinnamon
  • 1 oz
    semi-sweet chocolate, chopped
  • 2
    6 in size corn tortillas torn into pieces
  • 1 Tbsp
    white wine vinegar
  • 1/2 c
    chicken broth
  • 1 1/2 lb
    turkey (or chicken) thighs
  • cilantro spring, optional

How To Make turkey mole recipe

    Heat oil in a large skillet over med-high heat. Add the Chillies and saute 1 minute or until soft. Add the almonds, onion and garlic and saute 4 minutes or until onion is lightly browned.

    Spoon the mixture into a food processor, add the chipotle chili, sugar, spices, chocolate, tortilla pieces, vinegar and broth and process until smooth.

    Add the turkey pieces and spice mixture to the slow cooker, and stir to coat.

    Cover and cook on low-heat for 5-8 hours. Don't stir this during cooking. Remove and serve with a side of rice.
