Ingredients For pam's peppermint patties

1 lbconfectioners' sugar

3 Tbspmargarine, softened

3 tsppeppermint extract , more or less to your liking

1/2 tspvanilla extract

1/4 cevaporated milk

12 ozsemisweet chocolate chips

2 Tbspshortening
How To Make pam's peppermint patties

1Combine the confectioners sugar, butter, and flavorings in a bowl and mix well. Add the evaporated milk and mix until blended

2Shape the mixture into one inch balls. Arrange the balls on a baking sheet lined with wax paper. Chill for 20 minutes. Flatten balls with the bottom of a glass so they resemble patties. Chill for 30 minutes and then freeze for 5 minutes.

3Combine the chocolate chips and shortening in a double boiler. Heat over simmering water until blended, stirring frequently. Dip the patties into the chocolate mixture and arrange on a sheet of waxed paper. Let stand until firm.
