These bars are named after Nanaimo British Columbia and are a staple everywhere there. They are so rich and delicious. Creamy chocolatey and no baking.

Ingredients For nanaimo bars

  • BOTTOM LAYER
  • 1/2 c
    butter
  • 1/4 c
    sugar
  • 5 Tbsp
    cocoa powder
  • 1 lg
    egg lightly beaten
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    graham cracker crumbs
  • 1 c
    shredded coconut
  • 1/2 c
    walnuts chopped
  • FILLING
  • 1/2 c
    butter
  • 4 Tbsp
    french vanilla pudding powder
  • 1/3 c
    heavy cream
  • 3 c
    powdered sugar
  • TOPPING
  • 8 oz
    semi sweet chocolate
  • 2 Tbsp
    butter

How To Make nanaimo bars

  • 1
    For the first layer. Melt the butter in a saucepan. Stir in the sugar and cocoa powder until smooth. Whisk in the egg and vanilla and remove from heat. Stir in the graham cracker crumbs, coconut and walnuts. Press into a greased 8 inch square pan and place in the fridge for 30 minutes.

    for the filling Cream the butter with a mixer. Beat in the cream and pudding powder. Beat in the powdered sugar slowly. Spread over the first layer and place in fridge until firm.

    for the topping Melt the chocolate and butter together in a saucepan over low heat. Once smooth and melted spread over filling layer and place back into the fridge until chocolate has hardened. Cut into squares.
