This sweet treat is always welcomed in and around British Columbia and beyond. Nanaimo is a small town on Vancouver Island. People know they can get this delight on the Ferries and coffee shops around the area. There are many variations including one for Christmas with mint filling.... yummmmm

Ingredients For nanaimo bars

  • BOTTOM LAYER
  • 1/2 c
    butter, unsalted
  • 1/4 c
    sugar
  • 5 Tbsp
    cocoa powder
  • 1 1/4 c
    graham crackers, crushed
  • 1/2 c
    almonds, chopped
  • 1 c
    coconut
  • 1
    egg
  • SECOND LAYER
  • 1/2 c
    butter, unsalted and soften
  • 2 Tbsp
    cream + 2 tsp cream
  • 2 Tbsp
    vanilla custard powder/ instant vanilla pudding mix
  • 2 c
    icing sugar
  • TOP LAYER
  • 4
    chocolate squares semi sweet (1 oz each)
  • 2 Tbsp
    butter, unsalted

How To Make nanaimo bars

    Bottom Layer Put Graham crumbs, nuts and coconut in a bowl and mix. Melt butter, sugar and cocoa in a sauce pan low heat and stir till sugar is dissolved. In a separate bowl beat egg and add the cocoa/butter mixture Slowly to the egg. Place back on heat till it becomes thick. Pour into Crumbs and press into a 8x8 pan. put in fridge to harden.

    Second Layer Cream butter and custard powder add cream and icing sugar and mix till fluffy. Spread over cooled bottom layer. Place back in fridge till its completely stiff. (20 min or so)

    Top Layer Melt chocolate and butter in sauce pan on low heat/ or double boiler. Mix till smooth. Cool slightly and pour over the second layer and Chill in fridge.

    Enjoy. If you find you want more of a vanilla taste add extract. You can add any extract you wish to vary the taste.
