mini s'mores parfaits

I saw a similar idea in 1 of my daughters magazines, but they used slices of pound cake. I wanted something lighter for the grand kids..and myself lol. So I made these. I say a 1/2 cup pudding, but we ended up putting a 1/2 cup then layering it again w/ more pudding. It all depends on how big the glasses are. My oldest granddaughter added mini M & M's to hers so obviously you can improvise! Just have fun making them and enjoy eating them:-)

Ingredients For mini s'mores parfaits

  • 1-/2 c
    graham cracker crumbs
  • 1-1/2 c
    marshmallow cream
  • 1
    4-serving box sugar-free, instant chocolate pudding mix
  • 2 c
    cold 2% milk
  • 1-1/2 c
    cinnamon graham crunch cereal or any square graham flavored cereal
  • hershey's chocolate syrup for drizzling

How To Make mini s'mores parfaits

    In lg bowl whisk together the pudding mix and the cold milk until mixed. Cover and place in the refrigerator.

    Evenly spoon graham cracker crumbs into 6 - 8 oz parfait glasses. Layer each glass with 2 tbsp marshmallow cream, 1/2 cup pudding and some of the cereal.

    If the glass still has room, layer it again w/ 2 tbsp marshmallow cream, pudding and cereal. Top each glass w/ remaining marshmallow cream and drizzle w/ chocolate syrup.
