How To Make gram's chocolate zucchini bread

1Preheat oven to 350 degrees F. Grease and flour 2 or 3 loaf pans (Pans should be at least 2/3 full of batter.) Set aside.

2In the bowl of an electric mixer, beat eggs until thick and light. Gradually add sugar, beating after each addition. Add oil and chocolate and mix well.

3In a separate bowl, combine the flour, baking powder, baking soda and salt. Add to wet ingredients at low speed.

4Add zucchini (and nuts if desired) and mix by hand until well combined.

5Divide evenly among prepared panes and bake for 45-50 minutes or until toothpick inserted near the middle comes out clean.

6Cool in pan for 10 minutes then transfer to cooling rack to cool completely.
