For a more "festive" flavor, add 1/2 teaspoon cinnamon and 1/4 teaspoon ground cloves to the batter. These flavors pair well with the slight bitter taste of the unsweetened chocolate.

    eggs
  • 3 c
    sugar
  • 1 1/2 c
    vegetable oil
  • 3
    squares unsweetened chocolate, melted (3 ounces)
  • 3 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 3 c
    grated zucchini
  • 1 c
    chopped walnuts, toasted (optional)

How To Make gram's chocolate zucchini bread

    Preheat oven to 350 degrees F. Grease and flour 2 or 3 loaf pans (Pans should be at least 2/3 full of batter.) Set aside.

    In the bowl of an electric mixer, beat eggs until thick and light. Gradually add sugar, beating after each addition. Add oil and chocolate and mix well.

    In a separate bowl, combine the flour, baking powder, baking soda and salt. Add to wet ingredients at low speed.

    Add zucchini (and nuts if desired) and mix by hand until well combined.

    Divide evenly among prepared panes and bake for 45-50 minutes or until toothpick inserted near the middle comes out clean.

    Cool in pan for 10 minutes then transfer to cooling rack to cool completely.
