eamon & rae's oatmeal applesauce muffins

I was baking with my nephew (bff's son) and we modified an existing recipe for these and came up with an even yummier version. I have been baking them once a month since. As a side note, I have experimented with differing amounts of each flour, and half wheat and half white seems to be the best tasting, best consistancy combination. Also, regular chocolate chips can be substituted for the white; we prefer the white.

Ingredients For eamon & rae's oatmeal applesauce muffins

1/2 cbutter, softened

3/4 cbrown sugar, firmly packed

1egg

1/2 cwheat flour

1/2 call purpose flour

1/2 tspcinnamon

1 tspbaking powder
-
1/4 tspbaking soda

1/4 tspsalt

3/4 capplesauce, unsweetened

1 coats, uncooked (old-fashioned)

3/4 cvanilla or white chocolate chips

3/4 cwalnut pieces
How To Make eamon & rae's oatmeal applesauce muffins

1Cream butter, add in sugar, and mix well. Add in egg, mix well.

2Combine flours, cinnamon, salt, baking powder and soda.

3Add flour mixture alternately with applesauce to the creamed mixture.

4Mix in oats, walnuts, and white chocolate chips.

5Spoon into muffin cups (1/2 to 2/3 full, for smaller muffins). Bake at 350 degrees for 20-30 minutes (time depends on each persons oven).

6Cool a bit, peel off muffin paper, eat, enjoy!
