My favorite flavor combination of chocolate and raspberries.

These homemade brownie bars have a raspberry layer in the middle. Sounds like a simple dessert, but they are a brownie bar like no other. Very chewy and soft, they have a wonderful sweet chocolate flavor that's mixed with the layer of tart raspberry fruit spread. Melted dark chocolate is drizzled over them and topped with a fresh raspberry. Bite into these chocolate and raspberry bars and your taste buds will swoon.

Ingredients For chocolate & raspberry bars

  • 1 c
    butter, softened
  • 1 c
    sugar
  • 2 lg
    egg yolks
  • 1/2 tsp
    vanilla
  • 1 1/2 c
    all-purpose flour
  • 1/2 c
    cocoa powder
  • 1 tsp
    baking powder
  • 10 oz
    seedless raspberry fruit spread
  • TOPPING
  • 4 oz
    bittersweet chocolate, finely chopped
  • 1/3 c
    heavy cream
  • 1 c
    raspberries

How To Make chocolate & raspberry bars

  • Dish lined with parchment paper.

    Preheat oven to 350 degrees. Line an 11x7" baking pan with parchment paper.
  • Creaming butter and sugar.

    In a large bowl, cream butter and sugar until fluffy.
  • Adding eggs and vanilla extract.

    Beat in egg yolks and vanilla.
  • Flour, cocoa powder, and baking powder in a bowl.

    Combine flour, cocoa powder, and baking powder.
  • Adding flour mixture to butter.

    Gradually add the flour mixture to creamed mixture. Blend well.
  • Half the mixture pressed into the baking dish.

    Press half the dough into the bottom of the baking pan.
  • Jam spread over the layer of batter.

    Top with spreadable fruit.
  • Remaining dough crumbled and sprinkled over the jam.

    Crumble remaining dough over fruit.
  • Baking the bars.

    Bake for 35 - 40 minutes.
  • Cooling the baked bars.

    Cool completely on wire rack.
  • Bars cut into squares.

    Remove from pan and cut into squares.
  • Bringing cream to a boil.

    Place chocolate in a bowl. Bring cream to a boil.
  • Hot cream poured over the chocolate and whisking until melted.

    Pour cream over the chocolate. Whisk until smooth.
  • Chocolate drizzled over the bars and a raspberry on top.

    Drizzle chocolate on cut bars. Then top with raspberries. Enjoy!
