I use Jacquin's Glaciale CREME DE MENTHE. You can us mint oil if you prefer. These are always a big hit. This is a recipe I have made for years. It was given to me by a friend.

Ingredients For chocolate mint squares

1 csugar
-
1/2 cbutter
-
4eggs, beaten
-
1 cflour
-
1/2 tspsalt
-
1 tspvanilla

6 oz.can chocolate syrup
- MINT LAYER:

2 c10x sugar (powdered sugar)

2 - 4 Tbspcreme de menthe or mint oil

1/2 cbutter
- GLAZE:
-
6 oz.package chocolate chips

6 Tbspbutter
How To Make chocolate mint squares

1Mix first 7 ingredients and pour into a greased and floured 9 x 13 pan

2Bake at 350 for 30 minutes. Remove from oven and let cool.

3Mix mint layer and pour over cooled cake

4Melt glaze ingredients together in a sauce pan until smooth and spread over mint layer and let cool

5Chill in refrigerator until set.

6Remove from refrigerator and cut into disired squares.
