Ingredients For chocolate chunk brownies

non-stick cooking spray

15 ozblack beans, canned - rinsed and drained (1 1/2 cups)

1 ccanola oil

4eggs
-
1/2 ccocoa, unsweetened

3/4 csugar

2 tspinstant coffee powder

2 tspvanilla

1/2 csemi-sweet baking chocolate chunks, melted

2/3 cwhole wheat flour

1 tspbaking powder
-
1/2 tspsalt
-
1/2 csemi-sweet chocolate chips
How To Make chocolate chunk brownies

1Preheat oven to 350 degrees. Line a 8x8x2 inch baking pan with foil, allowing edges of foil to extend over edges of pan; coat lightly with cooking spray. Set aside.

2Combine the black beans, oil, eggs, cocoa powder and sugar in a food processor. Cover and process until well combined and smooth, about 1 minute. Add coffee granules, vanilla, melted chocolate, flour, baking powder, and salt. Cover and process until smooth, about 30 seconds. Stir in the 1/2 cup chocolate chunks

3Pour batter into prepared baking pan, spreading evenly. Bake about 35 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs. Transfer to a wire rack to cool. Use foil to lift brownies from pan. Serve with coffee or latte, if desired.
